Tom’s Jalapeño Poppers

J PoppersHere’s another simple recipe that always pleases.
Many thanks to Kristin Callahan who introduced these too me- in a foreign country with danger all around……..but that is a story for another time.

Jalapeño Poppers
1 package cream cheese
1 cup shredded cheddar
8 slices cooked bacon- chopped
4 scallions- chopped finely
20 jalapeños

Mix the first four ingredients together. Slice the peppers in half, de-seed, and add the spread.
Place them on the BBQ until cooked to your desire. (or you can put them in oven at high temp)

It is so simple, yet so good!

(I love that these can be made hours ahead and pulled out of fridge when ready to cook)
