Tom’s Seasame Noodles

Here is a super simple mid-week meal that also makes great left-overs.  Not sure where I picked this up but I think there are a million variations.  Try this one or tweak it to your taste.

1 lb angel hair pasta
1/4 cup soy sauce (low sodium)
2 Tbspn tahini
2 Tbspn toasted seasame oil
1/4 tspn cayenne
2 cloves garlic, chopped
1-2 Tbspn grated fresh ginger
3-4 green onion, thinly sliced
2 carrots julienned
1 yellow pepper, julienned
1/2 cucumber, junienned
thin strips of cooked chicken breast

(toasted sesame seeds and red pepper flakes for garnish)

cook pasta then run under cold water to chill

mix soy through ginger (above) and toss with pasta.  add vegetables and chicken and serve

enjoy.  (sorry I neglected to save a “plated” photo)
